Helsar de Zarcero
In 2022 I visited the Helsar de Zarcero processing station together with our green trade partner Grounds Coffee. We visited farms from San Sebastian and Don Alexis’ Los Campos and after we met with Ricardo and his daughters Mariana and Lucía. Lucía is responsible for their farm and Mariana makes the quality control possible due to her Q-grading.
The mill was established by Ricardo and his brothers Felipe and Marvin in 2004. Both the farm and their mill are exemplary of sustainable practices. Although in the past it was a certified organic farm, they decided not to use the certifications anymore, but have continued to use organic practices. Instead they hold a Regenified Certification for regenerative agriculture. They use both collected rain water and fresh water to process cherries in the eco-pulpers. Each year they plant around 700 trees to offset the carbon their equipment produces.
Grounds Coffee
Grounds Coffee started the relationship with Helsar by purchasing their pasteurized cascara. For a long time it was marked as a waste product from coffee, but is actually a very tasty and useful superfood.
Bitterzoet Coffee Roasters' first coffee was a beautiful coffee from farm La Casita from Costa Rica. With that White Honey SL28 as a start we always have a base of quality from which we look for new coffees. And this milenio variety from Helsar describes what makes Costa Rica a lot of fun and joy to us.
